Ingredients

For the lamb & sauce

  • 500 g lamb shoulder or leg, cut into portions
  • 400 g couscous (semolina grains)
  • 2 carrots, peeled and cut into large pieces
  • 2 zucchini, cut into large pieces
  • 2 potatoes, peeled and halved
  • 1 turnip, cut into pieces
  • 1 large onion, finely chopped
  • 2 ripe tomatoes, chopped
  • 200 g chickpeas, soaked overnight
  • 2 tbsp tomato paste
  • 3 tbsp extra virgin olive oil
  • 1 tsp harissa (adjust according to taste)
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • Salt, to taste
  • Freshly ground black pepper
  • 1.5 litres water or lamb stock

Preparation

    Heat the olive oil in a large pot and brown the lamb pieces until they develop a rich golden color.

    Add the chopped onion and cook until softened.

    Stir in the tomato paste, harissa, turmeric, and coriander, allowing the spices to release their aromas.

    Add the tomatoes, chickpeas, salt, pepper, and water or lamb stock. Simmer for approximately 45 minutes.

    Add the vegetables and continue cooking until the lamb is tender and the vegetables are perfectly cooked.

    Steam the couscous using the traditional method, allowing the grains to become light and fluffy. Season with a little olive oil and salt.
