Tart shells
- 4 mini savory tart shells, baked
Hummus
- 250 g cooked chickpeas
- 40 g tahini
- 30 ml fresh lemon juice
- 1 garlic clove
- 40 ml extra virgin olive oil
- 30–50 ml cold water
- Salt, to taste
- Freshly ground black pepper
Olive tapenade
- 80 g pitted black olives
- 20 g capers
- 2 anchovy fillets (optional)
- 1 tsp Dijon mustard
- 20 ml extra virgin olive oil
- 1 tsp lemon juice
- Fresh thyme leaves
Garnish
- Micro herbs
- Purple shiso or red amaranth leaves
