Calissons d'Aix are among the most distinctive and historic sweets associated with Provence and are inseparably linked to the city of Aix-en-Provence.
The traditional identity of the calisson belongs to the refined world of Provençal confectionery, where delicate textures, balanced sweetness and the aromas of southern France come together in an elegant expression of regional gastronomy.
The classic calisson is traditionally recognized by its characteristic almond-like shape and its close association with almonds and candied fruits. Over generations it has become much more than a confection: it is a symbol of Aix-en-Provence and an expression of the culinary heritage of Provence.

Ingredients
- 800 g wheat flour
- 400 g butter
- 500 g fine granulated sugar
- 10 eggs
- 1 litre milk or cream
- Regional flavouring and/or fruit, as required
- 5 g fine salt
Preparation

Accurately weigh and prepare all ingredients before beginning. Prepare the moulds or baking trays by greasing or lining them appropriately to ensure easy release after baking.

Prepare the base mixture, respecting the correct order in which the ingredients are incorporated. Work it carefully until smooth and homogeneous, avoiding excessive mixing that could affect the final texture.

Add the selected regional flavouring or fruit in a balanced quantity so that it gives character to the dessert without overwhelming its fundamental flavours.

Transfer the mixture into the prepared moulds or trays and bake until an even colour develops and the centre is properly cooked. Adapt the precise temperature and time according to the size, thickness and format of the pieces.

Once baked, allow the preparation to rest and stabilise before unmoulding. Carefully remove from the moulds and complete the presentation with fruit, syrup or another characteristic element appropriate to the chosen interpretation.

Serve on simple, elegant tableware that allows the character of the dessert to remain the focal point. The presentation may be subtly enhanced with a fruit element, a delicate syrup or a fresh aromatic note. For buffet or professional service, each portion should be prepared to a consistent size and appearance.
